After 18 months of product development and 3D scanning, we remastered Chef Tom Colicchio’s favorite frying pan so you can make it your own.

## Description

Long before we collaborated on Fishing Knives and Roasting Pans, Tom mentioned this specific Carbon Steel Frying Pan a lot—almost enough to make us jealous, and definitely enough to make us curious. That led us first to a 3D printer, where we scanned Tom’s perfect pan, undoing 30 years worth of James Beard Award-winning cooking and hard-earned seasoning, to finally (re)create Tom’s Pan, which he purchased from Zabar’s in the 1980s.

Our Carbon Steel combines the heat retention of Cast Iron with the control and maneuverability of Stainless Clad, resulting in a natural non stick alternative. We stamp Carbon Steel into a thin disc that’s half the weight of cast iron but every bit as durable—so it seasons faster, responds quicker, and is rugged enough for your grill or open flame.

The pan clocks in at 2.5mm thick—compared to our standard 2.0mm—to add extra heft, quality, and durability. The 100% brass handle is long and easy to reach, even from the back of the oven. Brass develops its own unique patina and character over time, evolving alongside the Pan’s seasoning.

You may be surprised by my rating??? This lowest ratings was the lowest possible I could give to this pan. Deceptive it is as it could be possible as it does not HAVE COUNTRY OF ORIGIN  or serial number stamped on it, none whatsoever. It is advertised as premium, higher quality, unic design which I can say it is true BUT: if I wanted to pay premium for a pan as I did for TWO OF THIS SAME model, I want to have peace of mind that quality, safety is there, particularly as it is said on website made in sweden????? Where is the satmp on it? Where is the serial number that boldly Company owner state it in the presentation video on YouTube??? There are strict laws in Sweden, EU, and Canada imports: any items manufactured for export and imports from Sweden out of EU and imported in to US and Canada must have COUNTRY of Origin stamped on the back of item?? How did made in export it from Sweden,  from EU, and imported it into Canada???? Was it done illegally? I asked customer service for an explanation and received immediately answer that it is rear but they are made in SWEDEN. But that was not my point. Now you may say what is a big deal? Carbon Steel is the same no matter where it is made? BUT let me remind you the very famous Matfer bourgeat carbon steel pan Made In France? Received a recall in north america/states few years ago for leaking toxic metals as it was the case in EU countries. Interesting I have purchased different carbon steel products from made in that all of them boldly,  clearly says the stamp on the back:  Made In SWE.  Serial #. Nevertheless let give my rating to this pan if it hade PASSPORT: I would give it 7STARS for: design,  quality,  performance,  elegance that I love it, idea behind manufacturing, color choices of handle and blue steel, therefore premium price tag is appropriate.  I will not return them because these are still 7 Stars in my book.

### ★★★☆☆ Built well, handle is too small, heats up fast.

I bought this with several other pans, actually have more pans on the way after I received the first shipment and liked them so much . This pan is built well, but the handle it’s too small compared to Made In own handles which are extraordinary . Maybe Tom Colocchio has really small hands? This handle heats up very quickly too. If I were to do it over I’d buy the carbon steel pans with Made In handles. Everything else I’ve received is excellent.
