After 18 months of product development and 3D scanning, we remastered Chef Tom Colicchio’s favorite frying pan so you can make it your own.

## Description

Long before we collaborated on Fishing Knives and Roasting Pans, Tom mentioned this specific Carbon Steel Frying Pan a lot—almost enough to make us jealous, and definitely enough to make us curious. That led us first to a 3D printer, where we scanned Tom’s perfect pan, undoing 30 years worth of James Beard Award-winning cooking and hard-earned seasoning, to finally (re)create Tom’s Pan, which he purchased from Zabar’s in the 1980s.

Our Carbon Steel combines the heat retention of Cast Iron with the control and maneuverability of Stainless Clad, resulting in a natural non stick alternative. We stamp Carbon Steel into a thin disc that’s half the weight of cast iron but every bit as durable—so it seasons faster, responds quicker, and is rugged enough for your grill or open flame.

The pan clocks in at 2.5mm thick—compared to our standard 2.0mm—to add extra heft, quality, and durability. The 100% brass handle is long and easy to reach, even from the back of the oven. Brass develops its own unique patina and character over time, evolving alongside the Pan’s seasoning.

I understand this is a niche piece of cookware. Its a nice carbon steel pan with one major flaw, in my perspective. I knew going in, based on the handle design and handle material, that the handle would get quite hot, very quickly. Made-In knew it as well, which is why Made-In included a hand towel with each pan. There is nothing inherently wrong with this, they the wanted the pan to be a close to the original pan it was inspired by as it could be. It's a gorgeous looking pan, and the preseasoning is convenient and makes for a high performing carbon steel pan. However; the handle gets so hot, so quickly, that I can't, in good faith, give it a 5 star review.

Cooks superbly; love using this excellent pan.  Made it non-stick and keep it that way easily, via the same methods I use for cast iron.  In my opinion, low-star ratings based on the cooking surface/performance of this pan are entirely unjustified and probably are posted by reviewers who don’t know how to, or don’t have the patience to, properly season and maintain a pan of this type.  Same thing with the “hot handle” objections — yes, the pan handle gets hot. So does a roasting pan coming out of a hot oven.  I like using this pan sufficiently to also buy the new smaller size plus both sizes for our summer home.

### ★☆☆☆☆ My least favorite Made In item.

I have several Made In pots and pans.  This was the most expensive and my least favorite.  It looks pretty and that’s it.  I know how to cook on carbon steel.  That’s not the issue.  The handle looks pretty at first but will burn you bad if you touch it while cooking.  If you want a pan to look at, it’s great.   When I cook I have several things on the stove at once.  All the rest have heat resistant handles so it’s not a habit of mine to grab a towel first before touching the handle.

### ★★★★★ Get a handle on the HOTNESS!!

Winner.  It's remarkable what a difference an inch makes....  I own 2, 12" carbon steel pans, one of which is slightly warped due to overheating.  This was meant to be a replacement for the warped one but also, not really: my wife doesn't care for the brass handle.  I do though and my vote counts as strongly as hers does.  My only complaint is the brass handle's heat conductivity.  That thing gets HOT.  This will factor into what I use it for but it literally is a perfect diameter (I also own the 10" carbon pan).  Like I said, it's remarkable the difference an inch makes.  Style points are maxed on this one so it both beautiful and incredibly functional.  The hot handle reminds you instantly so just have a towel handy.

This Roasting pan was gifted to me, in the trio set, about 4 years ago. I just cooked my Thanksgiving turkey , following the Tom Colicchio recipe. This was the best turkey I ever cooked. I was worried (because my pan didn't have a lid) that the meat would be dry and it was super juicy and the skin was nicely brown and crispy, just like the recipe said it would be. 
These products may be pricey but worth every penny. Highest quality craftsmanship and a delight to cook with.You cannot go wrong with this product.

I ordered the 9” pan last year and said to myself if only they would make a slight larger one. Well….here it is…the 11” carbon steel pan with brass handle is by far the best pan I’ve ever owned. I use it for everything-fish, steaks, chicken…u name it…I’ve cooked it in this pan. I also have their 12” carbon steel pan but the handle isn’t my favorite so when I receive word about the new release I ordered it the second I received the text it was live. I also ordered the roasting pan and can’t wait to see how great our thanksgiving turkey turns out. I’ve already cooked a few tenderloins in it to make sure it’s fully seasoned and ready to go. I must say Made-In has been a game changer in my kitchen. I discovered them when making the switch to non toxic ceramic and it’s been one order after another since then. Absolutely Love my new Tom Colicchio 11" pan with brass handle.  It's very handsome, & actually outshines my 10" & 12" Made In carbon steel pans.  Tom's pan now resides on my cooktop - it's too striking to be stored with my large & growing collection of Made In Stainless Steel cookware (& table top place settings & serving pieces).  
Tom's pan was well seasoned out of the box, but I chose to bring it to temperature over medium heat for a bit before attempting to cook in it.  To further set the seasoning, I applied a thing coat of Made In carbon steel seasoning wax, & placed it in a 400º oven (as instructed) for over an hour.  The result was a beautiful seasoned finish that appears to have been developed over a much longer time.  
Cooking with Tom's pan is a joy.  It's non-stick & heat retaining properties live up to its reputation.  
The brass handle does get quite warm during use, so the Made In kitchen towel that came in the box is a nice addition for "handling" the pan.

I purchased the Tom Colicchio series roasting pan to gift over the coming holidays, so I can't review this from having used it; however, I can attest that it's a beautiful piece of cookware and that I can't wait to give it to my special other, herself an accomplished home cook.  From having purchased other  Made In items I can also say that Made In quality is the highest one could hope for.   And the look and feel of their items are also to be admired. The Tom pans are thicker than the regular carbon steel which allows them to do some tasks better than the original thickness. I like having both pan options. The original pans heat up and cool down more swiftly making them perfect for fried eggs and the Tom pans retain heat a little more evenly across the entire pan with no hot spot. I also like that the Tom pans are sized differently than the original pans which provides a variety of options for different recipes. I love that the carbon steel pans feel indestructible. If I mess something up, I can just reseason. They aren't like non-stick in that they need to be maintained, but I love knowing that I don't have to worry about chemicals leeching into the food. My carbon steel pans are my very favorite. I have the 10" and 12" and both Tom pans - 9" and 11" - now. I feel like I am set!

Amazing pan and getting even better with each use. At first I was a little off put by the green in my brass handles but after an initial oven seasoning that cleared up and they are a beautiful brass. Function wise these are perfect for searing 2 medium sized proteins and have been a workhorse for dinners for two. The pans have handled, beef, pork and fish (after a few cooks and seasoning) they did great with breakfast hash and even chorizo, not even the acidity of the chorizo pulled seasoning when using a cold pan method. These are my go- to pans now. I was a bit disappointed because I bought two of the combination roasting pans in the pair and thought those roasting pans would have the same thickness. Unfortunately they do not but they are still great. I had also purchased 2 of these in the 9” while they were great they just couldn’t manage enough food, they are now perfect for side dishes and eggs.

This is the larger pan, and is more versatile in cooking for two.   I’m a big fan of the thicker carbon and the brass handle is beautiful, but it can get quite hot (so caution).  Heating is quick and efficient, and releases cook fantastically.

### ★☆☆☆☆ Price for Europeans 31% higher and delivery failed

Delivery to Europe is a nightmare now.  And Europeans get charged 31% more than US customers.   

I ordered the Tom Colicchio set (frying pan and roasting pan).  The price for US customers is $459 US dollars.  European customers used to be able to pay in US dollars and have goods delivered to Europe.  Now the website automatically switches to a higher EUR price as soon as you input a European delivery address, and you're not given a choice.  Suddenly the same set cost EUR 525 (the US dollar equivalent of $601.)  This has stopped me from ordering many other items, but on this occasion I acquiesced to the unfair pricing policy, as I wanted the set.

Then delivery failed.  I requested express delivery at an extra cost of EUR 20.  The set was sent without the appropriate paperwork to clear European customs.  DHL wrote to me to ask for proof that the items (manufactured in the EU, in Sweden), complied with EU sanctions on Russia and did not contain Russian steel.  A link and a snapshot of the Made In website showing the goods were manufactured in the EU did not suffice and my purchase was rejected by customs.  2 weeks after I placed my order, the box was turned around and is en route back to the USA now.

I hope Made In will refund me in a timely manner.  Sadly, because I actually love Made In products, I cannot recommend ordering for delivery to Europe because of the hassle with customs.  And with the higher pricing for Europeans for the same goods sold less expensively to US customers, I feel unfairly treated.  For that reason also, I can no longer recommend that other Europeans buy from Made In.

### ★☆☆☆☆ Sorry to say, I really hate this pan!

Beauty is, as beauty does.  The pan looks like it would perform well and look good doing it, but it doesn’t deliver.  The handle gets VERY hot.  Seasoning efforts were unsuccessful.  It is difficult to clean.  Can’t believe I was on waitlist for this pan and paid $200 for it.  Won’t keep it.
