# Grilled Oysters Two Ways - Made In Take your bivalves up a notch this summer and stick them on the grill, prepared either News Orleans-style or Bloody Mary-style, for an oyster with a kick. Ever accommodating, Culinary Creative Director Rhoda Boone is sharing two equally celebratory ways to prepare oysters—good news for folks too squeamish to slurp them raw off the half-shell. The first, a version inspired by the charbroiled oysters found in classic oyster bars that dot the Gulf Coast, features a rich, garlic butter sauce and Parmesan. The second turns the bloody mary on its head—instead of a cocktail garnished with various appetizers, it’s various appetizers garnished with a cocktail (in this case, a spicy tomato-vodka sauce). The vodka, while delicious, is technically optional, but it helps the sauce to emulsify. The bite and subtle heat of fresh horseradish is preferable to prepared, but ultimately, either will do. Note: Each recipe makes a dozen oysters—feel free to choose your favorite for a full set or make a half-batch of both.
