### ★★★☆☆ scratching too fast

I bought a  black 8" carbon steel  sauté pan a few months ago and already it has scratched and the steel is showing through.  Should I be afraid to use this? My cheaper stainless steel pan has been indestructible for years but it is very heavy. I decided to purchase the made in and it  is not living up to expectations.  I wish it was better.

### ★☆☆☆☆ Carbon steel coating peeled off

I bought this set last May as a birthday gift to myself.  I was quite disappointed that in less than 2 months of use, the carbon steel coating is already peeling off.  Yes, I did buy the seasoning wax and was diligently applying it every after use but all that was in vain.

I bought this as a gift for my husband. He loves to cook and is very partial to his cast iron skillets which he takes care of meticulously. I think he was a little skeptical at first and wasn't sure that he needed this given that we have great cast iron pans.  I'm very happy to report that this is his new go to pan. I too have used it a few times and it cooked eggs brilliantly.  No sticking.

Great Pans. We got the carbon non-stick to replace a competitor’s ceramic coated pans. The ceramic pans wore out after less than two years, which was a surprise to us.
The Made-In carbon pans were the easy to season and use. The non-stick surface has gradually improved over time. They are not inherently beautiful pans, but the patina they are developing is visually pleasing.
My wife does not like them too much because they are still heavy (but not as heavy as a competitor’s full steel pan or our cast iron pans) and she thinks that soap is required for a pan to be clean. I have followed the instructions on cleaning and there is no residue or flavor left over after just using an appropriate scrub brush and warm water. I follow this up with a quick heating of some avocado oil and the pan is set. Not much can be done with the weight besides switching to aluminum, but such pans in the past have not been nearly as nice.

We cook on natural gas and the pan makes it efficient. Heat transfers quickly and the thinner gauge provides us with the ability to cool it off fairly predictably just by setting it aside. We have had no problems cooking food to our exact needs. Again, with the proper scrub brush, it is easy to clean. 

We are only surprised that our expectations have been met. These pans are as-adverised.

### ★★★★★ A pleasure to cook with

As a serious home cook, I have been looking at Carbon Steel for a long time. My non sticks were getting the job done but were aging and needed replacing. I pulled the trigger and got the 3-piece set. These come pre-seasoned and cook beautifully. There is a learning curve going from non-stick to Carbon Steel, but I own cast iron so not a problem. I have had these less than a month now and have used them nearly every day. In the first week it was all about building up my seasoning and being careful with what I cook. Sticking with fatty foods to further build the seasoning. I did a large batch (9) of caramelized Vidalia onions in the 12-inch Frying Pan. Low and slow, took nearly 2 hours to get them darkened to how I like. No sticking, easy clean-up. I am very happy with my purchase. Once my seasoning is built up and I get past the break in period I will be using these tools to their full potential, inside and out! If you are looking for Carbon Steel, these will not disappoint. The stay cool handles really do stay cool. I had the temp up to 450f on my stovetop and the handle stayed cool. I really enjoy using these and they make cooking very enjoyable. Yes, the clean-up is more involved than a non-stick skillet but that will change as they get a nice dark patina over time and become non-stick.
