I’ve been cooking for over 57 years and felt if I never cooked again that would be just fine. Same old shiny metal pots and pans, little urge to learn new recipes unless I had to. So these Made In online ads for new-to-me kinds of cookware caught my attention. I wasn’t looking for new cookware but here I was—looking and getting interested! Maybe I could sear a steak to perfection or make pork chops looking like a cookbook picture and maybe I could tweak old familiar recipes into something new. So—hello to carbon steel! I think this will become a forever beautiful thing.

### ★★★☆☆ Great non-stick as advertised, domed center?

I'm very nervous about this pan, but only because I want to treat it right. I've used it a handful of times since it arrived, cooking up bacon, shallow-frying tofu, frying up some home fries. It's hefty, but feels good to hold. I seasoned it once in the oven right out of the box and have been habitually doing an additional seasoning after cleaning (only after the tofu did I need to use the oil+salt mixture). It already feels like the non-stick quality is improving with each use, which makes me happy. I'm docking a couple stars because the center of the pan is slightly domed. It makes it so that when I oil the pan with even 3-4 tbsp of oil, it all runs to the edges where it meets the sides of the pan, and the center of the pan tends to run dry and I have really needed to watch my food like a hawk to prevent sticking. I think it will be less of a problem over time as the seasoning continues to build up. I'm not sure whether this is an issue with the product or if I received a lemon.
