
Buffalo Chicken Smash Burgers
Buffalo wings and smash burgers come together in this recipe to maximize their joint slay.
This recipe incorporates the elite flavors of buffalo wings with blue cheese dressing into a crisp, juicy smash burger. Ground chicken gets seasoned almost like a meatball for rich depth of flavor, then smashed and browned on a carbon steel griddle and topped with buffalo sauce and a creamy bleu cheese celery slaw.

Heat a 10โ Stainless Clad Frying Pan over medium. Add a drizzle of neutral oil and saute the onions until translucent and tender but not browned, about 5 minutes. Add the garlic and cook for 1 minute more. Remove from heat and let cool slightly.

In a large bowl, combine the ground chicken, onion and garlic, egg, breadcrumbs, Parmesan, milk, parsley and salt, squishing it with your hands to combine. Itโs going to seem really wet, which means it will make a really juicy and tender burger. Trust the process. Divide the burger mix into 6 4-oz. balls.

Preheat a Carbon Steel Griddle over medium-high. As the Griddle preheats, add the Buffalo sauce and butter to a Stainless Clad Butter Warmer and warm on low.

Add a generous drizzle of neutral oil to the Griddle, drop the burgers, top with a square of parchment paper and smash with a Grill Press. Remove the parchment and cook undisturbed until crisp and browned, about 2 minutes. Flip and cook 2 minutes more. Transfer the burgers to a cooling rack set over a Sheet Pan and brush both sides with the warm Buffalo sauce.

Wipe excess oil off the Griddle and reduce the heat to medium. Spread a little mayonnaise on the cut side of each burger bun and toast until golden brown, about 2 minutes.

In a medium bowl, whisk together the sour cream, mayonnaise, blue cheese crumbles, lemon juice, and salt. Add the celery and leaves to the bowl and toss to combine. Add a burger patty to each bun and drizzle any remaining buffalo sauce. Top with celery slaw and two slices of butter lettuce each. Enjoy!
