# Pommes Aligot (Cheesy Mashed Potatoes) - Made In

There’s only one way to improve classic mashed potatoes: adding a (literal) pound of cheese to make pommes aligot, a starchy, cheesy, rich French iteration. 

Pommes Aligot (very cheesy mashed potatoes) is one of our favorite things to cook in a [Dutch Oven](https://madeincookware.com/products/dutch-oven/harbour-blue) during the colder months. Just like our Enameled Cast Iron cookware, these ultra-rich, cheesy, stretchy potatoes hail from France. This dish is traditionally made using Tome Fraîche, a cheese made in Aubrac, but our version calls for a mix of any melty, Alpine-style cheese you can find.
