# Grilled Cod with Achiote Marinade - Made In

Chef Rick Lopez’s beautiful summer meal features grilled cod coated with achiote and charred vegetables in both the vinaigrette and salsa.

Grilled fish is a meal that screams summer, although with our Carbon Steel Griddle, you can make this dish anytime of year. Black cod is also known as butterfish because of its silky texture, and Chef Rick Lopez of Austin’s La Condesa pairs it with two bright, flavorful sauces. The vinaigrette features charred scallions, while the salsa uses charred serranos. The whole dish is finished with a cooling radish and scallion garnish and can be served with or without tortillas for an elegant, yet simple to prepare dinner.

Chef Lopez coats the fish in a paste made of achiote, which gives it a beautiful orange color. Achiote, also called annatto, is a spice made from the seeds of a shrub native to Central America. It can be found online or in the international or spice sections of the grocery store, where it’s typically sold as seeds, powder, or paste. It has a unique earthy taste with slightly bitter and peppery notes.
