Like our Chef Knife, this Santoku (Japanese for “three virtues”) is an all-purpose tool that can slice, dice, and mince through meat, fish, and vegetables. But for many our Santoku’s flat cutting edge, which calls for a slightly different push-cut chopping motion, beats the Chef Knife in popularity due to its sheer speed.

Along its length, 28 individual flutes inhibit bits of vegetables from sliding up the blade of the Knife, and instead keep them where they’re supposed to be—on your board, in a neat little pile, ready to be sautéed.
