At just 6”, it fills the gap between the standard 8” Chef Knife and the (almost) 4” Paring Knife. Its ability to make smaller, defter cuts makes it Chef Sarah Heard’s favorite knife for everything from mincing to spatchcocking.

5th generation artisans in Thiers, France create each knife to be full tang and fully forged, meaning they’re crafted from a single rod of stainless steel for a sharper, perfectly balanced blade. Finished by hand to mimic a wood grain look, the slip-resistant Micarta handle is as beautiful as it is durable.
