Inspired by old-school butcher shops, it’s optimized for cutting extremely close to the bone, chopping through tough tendons, and can tackle thick-skinned vegetables. Last year, prolific chef and butcher Misti Norris used this Cleaver to take down a whole pig—earning it a permanent spot on her butchery roster.
The Cleaver is crafted in Thiers, France, where a 5th generation bladesmith hand-finishes the Olive Wood handle. It comes with an Italian Leather sheath that’s made in the USA.
