## Description

First launched in October of 2021, this heavyweight initially sold out in just five hours. Back again for a limited time, the Cleaver is full tang, meaning the blade extends all the way from the tip of the knife through the hilt of the handle for a perfectly balanced performance.

Inspired by old-school butcher shops, it’s optimized for cutting extremely close to the bone, chopping through tough tendons, and can tackle thick-skinned vegetables. 

The Cleaver is crafted in Thiers, France, where a 5th generation bladesmith hand-finishes the Olive Wood handle. It comes with an olive green leather sheath that’s tanned and finished in the Netherlands.

I added the Made In Cleaver with the Olive Wood handle to my block, and it is an absolute home run. Right out of the box, the blade is incredibly sharp, and the grain on the olive wood handle is stunning.

It has an excellent, heavy-duty feel that feels substantial and balanced in a larger hand, letting the blade's heft do the work for you. Because it's a premium high-carbon tool, I give the blade and wood handle a quick wipe-down with a butcher block conditioner to lock out moisture and protect them from the humid climate.

If you want a mid- to top-tier tool built to last a lifetime and be passed down to your kids, rather than cheap, mass-produced junk, this is it. It's worth every penny!

This was my first cleaver. I needed something to quickly break down whole chickens. I’m a home cook and don’t have a ton of time to cook during the week, so my meal prep gets condensed into a few hours on the weekend. After a grocery run to bag the best lean protein for the lowest cost, I have a lot of processing to do. Not only did my cleaver reduce the prep time, I really enjoyed getting deli thin slices off some of my larger pieces (e.g., beef for a Philly cheesesteak or chicken for a club sandwich. I had worried needlessly over the order. Did I really need this? But as I unsheathed it, my doubts faded away. As soon a as I had it in my hands on the cutting board I knew I’d made the right choice.

The cleaver looks great upon receipt and works fine on softer vegetables and meats. 

My blade chipped when used for cutting ribs. 

Not a true butcher cleaver as the blade is too brittle to tackle butchering tasks. 

Mine went back in the wooden case as soon as the blade chipped and had remained there since. 

Be careful if you are purchasing this for any butcher tasks.

A great "Middle Ground" cleaver that serves both purposes, but it is not the best at either. The spine of the blade is very thick, so using it as a more of a Chinese vegetable cleaver does present some issues, and the hardness of the steel may cause some chipping if you're intending to primarily use it as a meat cleaver. That being said, I love the feel of Made In knives, and this one is no exception. It's weighted well for my hands, the grip is comfortable, and it looks beautiful. There are many other individual cleavers out there that are much cheaper for each independent job, but not too many that try to thread the line. Even within that category there's even fewer that actually look good to me on an aesthetic level, so the price of this one is worth it to me, but your mileage may vary.

While it may not excel at both it's roles, it does work for both jobs. My kitchen space is limited, so having the one cleaver suits me well. If you are in the market for one specific need, this knife isn't for you. If you have no cleavers at all and like the look of this one, then I'd recommend it as long as you're aware of the pros and cons.

My cleaver is more than two years old and still just as sharp as when received. I never leave water on the blade, only while using it will it be wet. As soon as I finish cutting or chopping I wash lightly with soap, dry with a cloth towel, then slowly dry the cutting edge with a paper towel. It’s quality steel. Always get the water off. I find myself using this cleaver for most everything I cut because of its capability.

As with the Carving Knife, the Cleaver has the same issue with the handle. Both knives the tang extends beyond the handle material so that you hand and fingers catch on the ridge. This is not common with my other Made•In knives. So I think it is a recent QC issue that can be resolved.

A gorgeous piece, but it is HEAVY. Quite a bit heavier than I expected or any of my other cleavers. This may help with breaking down harder pieces of meat or bone, but for this reason I will not be reaching for it nearly as often as I hoped.

The knife is on the heavy side and takes some getting used to, but I found it’s great for chopping. The steel quality is not on par with my Wusthof knives. The blade warped slightly the first time I used it and the bolster got a knick from something even though I haven’t dropped it or hit it against anything. It’s an ok knife and fine for the price.

First time it was used to cleave some small oxtail it dented the blade in numerous places. Sent a warranty claim and support emails and have not received any replies. Have purchased many items through Made in and this is first thing that we have not been 100 percent satisfied with. Beautiful cleaver in appearance but not sturdy enough to be able to use to chop.

It is not a slicing vegetable cleaver because it is too thick or a heavy duty meat cleaver because it is too thin and not made for tough work. Thus it is not really great at anything except it has a kind of nice handle. I have many cleavers, most Japanese, and I like them better because they are each designed for a particular purpose. All my knives are bought for the purpose of being used and this cleaver is bought for looking pretty which is not what I typically want a tool for.

I spent good hard earned money for this cleaver and then made in release a leather cleaver sheath weeks later as an accessories. When I tried to purchase it. I was informed it was out of stock. When I asked to preorder one I was told that made in isn’t going to make any more. Why wasn’t it bundled in to begin with? Why wouldn’t limited edition customers offered first dibs on the limited supply of these sheaths? They could care less about their customers.
