Who says a spritz can’t also be sweet and a little bit spicy? Brian Sandhal of Heavy Muddle takes the classic Aperol spritz on vacation by way of the welcomed additions of pineapple rum, ginger syrup, and grapefruit juice. Similar to the Jungle Bird, a more straightforward tiki cocktail from the 70s, this drink combines Sandhal’s love of tropical and bittersweet flavors. Its name comes from the national bird of Italy. Serve in our White Wine Glass, tiny umbrella optional.

Pour all ingredients except soda and sparkling wine into a shaker and combine with ice to chill. Double strain into an ice-filled White Wine Glass.
Add soda and top with sparkling wine. Garnish with pineapple wedge and leaf.
