takes the classic Aperol spritz on vacation by way of the welcomed additions of pineapple rum, ginger syrup, and grapefruit juice. Similar to the Jungle Bird, a more straightforward tiki cocktail from the 70s, this drink combines Sandhal’s love of tropical and bittersweet flavors. Its name comes from the national bird of Italy. Ingredients

1 ½

ounces Aperol

1 ¼

ounces ruby red grapefruit juice

¾

ounces pineapple rum, such as Plantation

½

teaspoon ginger syrup, homemade or store bought

1

ounce club soda

3

ounces dry sparkling wine, such as Prosecco

Pineapple wedge and leaf for garnish

Instructions

STEP 1

Pour all ingredients except soda and sparkling wine into a shaker and combine with ice to chill. Double strain into an ice-filled
