If you’re tired of sweet cocktails, but still want something light and summery, Brian Sandahl of Heavy Muddle has the perfect drink for you. This classic aperitivo cocktail combines soda with dry white wine to make a spritzer. A splash of bitter Campari gives the drink a pretty orange hue and some grounding bitterness. The name bicicletta was allegedly inspired by the cafe patrons that would swerve home on their bicycles after an afternoon of drinking these. Though a charming anecdote, please cycle with care.

Ingredients
  • 3 ounces dry white wine (like Sauvignon Blanc or Pinot Grigio)
  • 2 ounces Campari
  • 2 oz club soda
  • Orange slice, for garnish
Instructions
    1.

    Fill a White Wine Glass with ice and pour in white wine and Campari. Stir for 5-10 seconds to chill.

    2.

    Top with soda water, and stir a couple more times to thoroughly mix. Garnish with an orange slice and serve.
