Its design, which features a short and slender blade with the flexibility to work around joints, makes it perfect for trimming away any unwanted fat from a brisket or breaking down whole poultry. The slip-resistant handle is forest green micarta, an incredibly strong resin with an opalescent finish.

Crafted by 5th generation artisans in the Knife capital of the world—Thiers, France—the Boning Knife is full tang and fully forged, meaning it’s crafted from a single rod of stainless steel for a sharper, perfectly balanced blade.
