What Chemicals Are Being Tested For In Cookware?

PFAS
PFAS, or per- and polyfluoroalkyl substances, are a group of synthetic chemicals used in consumer products like cookware, raincoats, stain-resistant carpeting, and food packaging. They are known as “forever chemicals” due to their persistence in the environment. Some of the most common are PFOA, PFOS, and PTFE, but there are thought to be as many as 15,000 PFAS chemicals in total. PFAS have been linked to an increased risk of certain cancers, as well as thyroid disorders, asthma, decreased fertility in women, and a host of other adverse health effects. A study by the Centers for Disease Control and Prevention (CDC) reveals that nearly all Americans have detectable levels of PFAS in their blood.
Cadmium
The heavy metal cadmium is often found in cheap or low-quality cookware made from aluminum, steel, or copper. Exposure to cadmium can result in kidney disease, respiratory issues, and other long-term health effects, and has been linked to a variety of cancers.
Lead
Lead is a highly toxic heavy metal that is often found in low-quality aluminum, steel, copper cookware. Even minimal exposure to lead can cause permanent health problems in children, from lower IQ levels to behavior and learning problems. It can lead to health issues like high blood pressure and cardiovascular disease in adults.
Arsenic
Arsenic is a naturally occurring element that has been linked to an increased risk of cardiovascular disease, diabetes, cancer, and a variety of other chronic health issues. Arsenic has been detected in certain brands of carbon steel pans, as well as cookware manufactured in Pakistan from recycled scrap materials.
How is PFAS Tested?
Per and polyfluoroalkyl substances (PFAS) are extracted after either a heated migration from the pot, pan, or plate into water, or scrapings of two 1” by 1” inch squares of the coating of the pot or pan, which is then collected with a Kimwipe saturated with methanol. PFAS are then extracted from the water or saturated Kimwipe sample with buffered acetonitrile using the QuEChERS methodology. The resulting extract is cleaned up with MgSO4, PSA, and GCB, further cleaned up with polymeric weak anion exchange solid phase extraction (SPE), then analyzed by LC-MS/MS. Isotopically-labelled internal standards are used to correct for potential matrix effects.
How are Heavy Metals Tested?
Pans were filled with 4% acetic acid solution (food simulant) and simmered for 2 hrs followed by cooling and continued leaching for a total of 24 hrs. The data on this report corresponds to the concentrations of analyte measured in the leachate.
