Our newly redesigned French Knife Collection features a cutting-edge innovation that delivers sharper, longer-lasting performance: Asymmetrical Bevel Tech, or ABT for short. What Is Asymmetrical Bevel Tech?

At the heart of this redesign is Asymmetrical Bevel Tech, or ABT, a proprietary edge geometry that redefines what sharp really means. Traditional Western-style knives typically feature a symmetrical edge, meaning both sides are sharpened at the same angle. ABT flips that standard by combining a 14ยฐ sharpening angle on one side with a 4ยฐ polished angle on the other.

This asymmetrical edge reduces friction and enhances cutting precision, resulting in:

  • Twice the sharpness of conventional double-bevel knives
  • Smoother, more controlled slicing, even through tough or delicate ingredients
  • Less resistance with every cut, which minimizes fatigue during long prep sessions

Whether youโ€™re finely dicing shallots or slicing through a thick cut of meat, ABT makes each cut feel effortless.

A Blade That Holds Its Edge

Sharpness means little if it doesnโ€™t last. Thatโ€™s why our French Knives are fully forged from high-carbon X50CrMoV15 NITRO+ stainless steel, a premium alloy known for both edge retention and corrosion resistance. Itโ€™s hardened to a Rockwell rating of 58+, making it tough enough for professional use yet easy to maintain at home.

While most knives wear down unevenly over time, the ABT edge stays sharper, longer. And when the time comes to touch it up, a few quick passes with a honing rod on the non-cutting side is all it takes to restore it to like-new condition.
