The Perfect Posole
Posole (or pozole) is a traditional Mexican dish of rich, brothy soup or stew made with hominy and meat (Chef Shepherdโs take on the classic relies on chicken). The complex flavors of the hominy, chiles de รกrbol, and guajillo chiles are given time to develop and meld into a beautifully rich, fragrant broth thanks to the cast iron core and Cloud Cover Lid.
This warming stew comes to us from James Beard Award winner Chef Shepherdโs cookbook โCook Like a Localโ and pairs perfectly with our Dutch Oven. Sign up for our Giving Tuesday Virtual Class to cook this vibrant stew alongside Chef Shepherd and Tom Colicchio.
The Southern Smoke Foundation
Founded in 2015 by Chef Chris Shepherd, Southern Smoke is a Houston-based Non Profit thatโs provided over $9 million in support to the food and beverage industry during the COVID-19 pandemic and other hardships. Made In is proud to partner with Chefs like Chef Shepherd to give back to the community thatโs welcomed us with open arms, and weโre excited to bring you the opportunity to do the same. Show the hospitality industry your support by registering for Chef Shepherd and Chef Colicchioโs virtual cooking demo benefitting this amazing organization.
Meet the Chefs
As the chef behind iconic Houston restaurants such as Underbelly, One Fifth, Georgia James and Wild Oats, Chef Shepherdโs influence stretches far beyond the south. The James Beard Award Winner also spearheaded the Southern Smoke Foundation, a group of hospitality vets serving as the industry's safety net, raising money and connecting Food and Beverage professionals with essential resources and opportunities. The posole recipe youโll make in class is from his cookbook โCook Like a Local.โ
Your other host is the inimitable Chef Tom Colicchio. From his time at the storied Gramercy Tavern to his ongoing role as head judge of Top Chef, Chef Colicchio has been pioneering new American fine dining for most of his career. When heโs not crafting something exceptional in the kitchen, heโs often found advocating for a more balanced, accessible food system that promotes affordability and nutrition for all Americans. His podcast, Citizen Chef, dives into the complexities of the way our country consumes food and seeks to provide solutions to growing food insecurity.
Cook alongside this incredible pair while making a difference in the upcoming Giving Tuesday virtual class.
