The Perfect Posole

Posole (or pozole) is a traditional Mexican dish of rich, brothy soup or stew made with hominy and meat (Chef Shepherd’s take on the classic relies on chicken). The complex flavors of the hominy, chiles de árbol, and guajillo chiles are given time to develop and meld into a beautifully rich, fragrant broth thanks to the cast iron core and Cloud Cover Lid.

Meet the Chefs

As the chef behind iconic Houston restaurants such as Underbelly, One Fifth, Georgia James and Wild Oats, Chef Shepherd’s influence stretches far beyond the south. The James Beard Award Winner also spearheaded the Southern Smoke Foundation, a group of hospitality vets serving as the industry's safety net, raising money and connecting Food and Beverage professionals with essential resources and opportunities. The posole recipe you’ll make in class is from his cookbook “Cook Like a Local.”

Your other host is the inimitable Chef Tom Colicchio. From his time at the storied Gramercy Tavern to his ongoing role as head judge of Top Chef, Chef Colicchio has been pioneering new American fine dining for most of his career. When he’s not crafting something exceptional in the kitchen, he’s often found advocating for a more balanced, accessible food system that promotes affordability and nutrition for all Americans. His podcast, Citizen Chef, dives into the complexities of the way our country consumes food and seeks to provide solutions to growing food insecurity.
