What Is a Honesuki Knife?

The Honesuki is a Japanese boning knife traditionally used for breaking down poultry, but its versatility extends beyond butchery. The shorter, triangular blade allows for fine, controlled cuts, making it ideal for finesse prep and even as an alternative to a utility or boning knife.

The VG-10 steel core provides razor-sharp precision, excellent edge retention, and easy maintenance. Unlike laser-etched imitations, this knife embodies the art and function of traditional Damascus steel craftsmanship, and ensures each blade pattern is unique and no two knives are alike.

A Unique East-Meets-West Bolster

One of the most distinct features of this knife is its fully forged bolster, a rare feature in Japanese knives. While most knives from this region lack a bolster, we worked for years to develop a true Made In bolsterโ€”offering enhanced grip, balance, and control for both precision and power.

Paduak Wood Handle
