Focaccia is a delightful and versatile olive oil-enriched bread with a soft, open crumb. Some recipes use yeast to leaven the dough, but using a starter gives the bread added complexity that is worth the extra effort.

This recipe is courtesy of Phoebe Raileanu from Casper Fermentables in Austin, TX. It’s truly a winning combination of flavors— the sweetness of the caramelized onions, the mild bite from the chives, and the tanginess of the sourdough complement each other beautifully. 

We use the Mel the Baker recipe for sourdough starter—be sure to feed it about 12 hours before starting your focaccia. This recipe makes a double batch of focaccia but you can halve the ingredients to make a single batch if you prefer. We recommend using a scale to make this recipe, but have provided cup measurements if you don't have one.
