Handle is terrible. It's poorly angled for a pan this heavy - you need to grasp it close to the pan for any control and as everyone has noted the handle gets super hot. So you basically have to use oven mitts with this guy. And the pan itself is very poorly made - I did the oven seasoning twice before using. And after cooking one sauce with wine and lemon, the seasoning was *stripped* from the pan, leaving it discolored. No complaints about the non-stick, but if half the point of spending this money on the pan are its looks, you want the pan to keep those looks. But it turns out to be extremely fragile for a pan this burly. This has ruined my trust in this company. — Disappointed. ### ★☆☆☆☆ High-Maintenance The most high-maintenance pan I've ever owned. Dont buy this unless you want to endlessly season and keep away from every drop of moisture when you store it. I oil this thing like crazy before and after use ... still comes out with rust and everything still sticks. And don't plan to use the handle unless you have a NASA-grade oven mitt. I have many other Made In pans, including carbon-steel with zero issues. This thing is unusable. I understand this is a niche piece of cookware. Its a nice carbon steel pan with one major flaw, in my perspective. I knew going in, based on the handle design and handle material, that the handle would get quite hot, very quickly. Made-In knew it as well, which is why Made-In included a hand towel with each pan. There is nothing inherently wrong with this, they the wanted the pan to be a close to the original pan it was inspired by as it could be. It's a gorgeous looking pan, and the preseasoning is convenient and makes for a high performing carbon steel pan. However; the handle gets so hot, so quickly, that I can't, in good faith, give it a 5 star review. — Corey ### ★★★★★ Excellent pan, definitely worth the price Cooks superbly; love using this excellent pan. Made it non-stick and keep it that way easily, via the same methods I use for cast iron. In my opinion, low-star ratings based on the cooking surface/performance of this pan are entirely unjustified and probably are posted by reviewers who don’t know how to, or don’t have the patience to, properly season and maintain a pan of this type. Same thing with the “hot handle” objections — yes, the pan handle gets hot. So does a roasting pan coming out of a hot oven.
