The only issue I have with it is the texture of the surface. I was expecting a smooth seasoned finish. I understand it's almost sandpaper-like to make it more non-stick, but it doesn't really work and it's really difficult to wipe clean or wipe with oil after use. It heats up quickly (I use it on an induction stovetop! you can keep it at 2 or 3 max) and fits perfectly over two burners, or just the big one, keeping a portion outside the burner to create 2 different heat temperatures. It's domed in the center, which I'm sure is intended for some kind of heat distribution, but it just means that anything slippery (I'm lookin at you, eggs) slide toward the edges. We were hoping for some kind of all-purpose griddle, and this is just NOT that.
