I am extremely disappointed in the quality of the nonstick surface. I have had one of the pans replaced twice and almost immediately it scratches again along with the other 2 sizes. This is unacceptable given the price. I have used only silicone or wooden utensils to cook and soft sponges to wash. However, The coating on the pan started to pit and show scuffs after 8-10 weeks of occasional use. What a fantastic pan. It heats up quickly and cooks food evenly. I got the 12 inch which I thought might be too big as I typically only cook for 1-2 people but the extra pan space is perfect and prevents food bunching up and steaming. The non-stick properties are amazing. Every bit as good as traditional non-stick. I made a chicken teriyaki last night and the chicken picked up a beautiful crust and the sauce caramelized beautifully. Clean up was a breeze!! The pan is also beautiful the finish sparkles and the handle is very comfortable. While stainless and carbon steel have their place, when I’m looking to quickly whip up some eggs, reheat leftovers and not worry about getting the heat or cooking fat just right to avoid sticking, this pan does it with ease. Medium to low heat is your friend if you’re working with a high BTU oven.
