I am very happy with this kadai.  I do not use it for Indian food as much as a convenient pan for 1-4 people.  Sautéing is cleaner and easier than in a frying pan and I can use less oil than I would in a sauté pan.  Yes, it should come with a lid for western cooks.  I know that it traditionally doesn’t have one in India.  The pan is very well made.  I truly enjoy using it multiple times a week.  This is a great “mini wok.”

I just made a green bean, queso dish for a party, simmered in the kadai and served in it too, this piece is great to cook in, then looks stunning for serving as well. Perfect sized kadai for cooking for 2-3 people. I’ve used this for all types of indian cooking (dry subjis, curries, making tadka and adding dal on top, etc) and it’s been great for all. It’s probably the best quality kadai you can buy within the US.

I even find myself reaching for it for other kinds of cooking (like making a pasta sauce and mixingin cooked pasta). The shape make it super versatile. I just wish it came with a lid.
