We are familiar with the excellent cooking benefits of Made In's stainless clad since we have several others. It's has the same workspace as our Made In stainless saucier but with less exposure to the heat and higher sides. We have substituted the Kadai for our wok and frying pans. The Kadai offers the same wok experience of using the sides to mix the ingredients without the high heat, but the larger bottom permits simmering the similar to a frying pan. We tend to use less oil than the wok which feels a little healthier.
