Featuring a 1.2mm thin profile and a slightly longer bottom edge than the typical chef knife, the Fillet Knife is the perfect companion for deboning and fileting delicate whole fish, removing silverskin and fat from beef and pork tenderloins, and other light butchery tasks.
The Fillet Knife uses the same full tang, fully-forged construction as our other French-crafted knives. This construction, paired with the flexible blade and thin, pointed tip, give the knife a balanced hand feel, as well as optimal precision and control for the user. Along with the knife’s unique silhouette, this enables longer, smoother strokes, cutting down on extra effort and making for elegant, uniform pieces of fish and meat.
