Medium to low heat is your friend if you’re working with a high BTU oven. Unfortunately, after about six months of use, I have been extremely disappointed with the durability. Two of the pans have become difficult to clean, no longer cook food evenly, and the surface quality has noticeably declined. I followed all recommended cooking and cleaning instructions, only washed them by hand, and avoided using any metal utensils and yet there are still big scratches in the pan.
