Definitely make sure the burners/hobs on your cooking surface are big enough to evenly heat the whole griddle. The griddle hangs over the ends of the "flex zone" on our induction cooktop by a couple of inches which causes it to warp because more heat is being applied in the middle (once cool, it goes back to being perfectly flat). Not the fault of the product in any way, just something to pay attention to. I have used it over two gas burners in my gas stove for eggs and steaks and vegetables as well as over charcoal on the Made In grill for burgers. And lately I have been using it as a "baking steel" for my baguettes and sourdough bread. No warping or bending in any case.
