### ★★★★★ Some quirks, but ultimately solid

Overall, the carbon steel frypan compares favorably with the Matfer Bourgeat and DeBuyer Mineral B Pro. When the pan first arrived and I saw the textured finish, my heart sank. I’ve sanded smooth a cast iron pan and I was not going to do it again. Apparently the early versions of the Made in CS pans had smooth finishes, which is what I expected. The new pan has a very rough texture that looks and feels like a Lodge CI pan. I am not going to sand another pan, so I thought about returning it and actually spent a few days just looking at it and researching. The rough texture allows the seasoning to stick better, but gives resistance when trying to slide food around.  I decided to try to work with it.  I like the slope and height of the sidewalls enough to give it a shot.  I figured if it sucked, I could always return it. I gave it three additional layers of seasoning, and It’s started to smooth out inside. My first cooking attempts were not great. Lots of sticking, but the seasoning continued to build, and I learned how to better control heat. It handles much differently than stainless clad, so I had to change my approach.  When I first got fried eggs to slide around and not burn, my attitude changed. Cooked cold pan chicken thighs -perfect.  Seared a salmon fillet -perfect. Seared a steak -almost perfect (user error). My perseverance paid off and I’m enjoying my CS pan very much. It’s a keeper. So the positives: shape and height of sidewalls, plus it handles induction quite well. Negatives: I’d still prefer it was smooth, not textured, but I can live with it. The handle.  I don’t understand it. I’d be fine with the same stay cool handles that are on the stainless clad pans.  The curved and flat handle on the CS skillet is attractive, but weird. I’m getting used to it though.  I’d still prefer the flatter “standard” hollow handle. If the 5 quart saucier didn’t work so well for stir fry, I’d consider getting the wok. Bottom line: the pan has some quirks, but it has stayed flat on my induction burner, the seasoning is solid, weight is good, and it cooks well. 4.5 stars.

I don’t know what to say. Bought the seasoned 10″ pan. Used it and it definitely was not non stick. So, seasoned it per video on the subject. Picture attached of results. What am I doing wrong????

Love the quality.  

Just be aware of the size.  I previously purchased the 10 inch ceramic pan, and expected the 10 inch carbon steel pan to be the same size.  But the carbon steel pan was much smaller.
