I typically cook for one to three people, and this is the perfect size for making quick pan sauces. While my protein is cooking, I’ll prep my aromatics in the butter warmer. Once the protein is done, I deglaze the main pan, pour all of that flavorful fond into the warmer, reduce the sauce to the consistency I want, and finish with a knob of butter if needed. This workflow is so much easier than trying to build and reduce a sauce in a large sauté pan. The smaller diameter speeds reduction, gives me better control, and feels like the right tool for the job. I love this little pan so much that I bought a second one.
