## Description

A braise is two cooking jobs pretending to be one. You need hard, dry heat to build the crust, then wet, slow heat to break the meat down, and most kitchens do the first in one pan and the second in another, which loses the fond and adds a dish. The Cast Iron Braiser does both.

Because the pan is wide and shallow rather than tall, the whole batch of meat touches the surface at once instead of stacking and steaming, and the reduced height means the oven's heat reaches the top of the dish, so a braise finishes glossy instead of pale. The side walls are cast thinner than the base, which keeps heat retention at the cooking surface and takes weight out of the lift.

Nothing here wears out. Sand-cast, then machined, lathed and buffed smooth, so seasoning bonds evenly and the patina builds from the first cook rather than in patches. Hand-seasoned in our organic flaxseed oil blend. Safe for gas, electric, induction, oven, grill and open flame. Made in the USA, at a single American foundry.

## Care

For most meals, cleaning cast iron takes less than five minutes.

- Let the pan cool slightly
- Rinse with hot water and scrub
- A small amount of mild soap is completely fine to use if you want to cut grease or fully clean the pan.
- Dry thoroughly.
- Once dry, apply a very thin layer of seasoning wax or high-smoke point oil.
- Place the lightly oiled pan over medium-high until you see faint wisps of smoke.
