# Hybrid Nonstick Pan Alternatives: What Chefs Use Instead - Made In

Hybrid pans put steel ridges over a nonstick coating. Independent testers found this leads to subpar performance in searing and nonstick. These are the pans Chefs cook with instead.

Hybrid pans make a big promise. One pan that sears like stainless, releases like a nonstick, and holds heat like cast iron.

Independent testers keep landing in the same place: the pan does a bit of each and none of it as well as a pan built for one job. Bon Appétit put it this way in its September 2026 review: if a hybrid pan “requires the same amount of care and prep as a stainless-steel, cast-iron, or carbon steel pan,” there is no point buying it over those materials. [1]

A pan designed for one job does that job well. Stainless is built to sear. Nonstick is built for release. Cast iron is built to hold heat.

## Why hybrid pans come up short

A hybrid pan lays a raised steel pattern over a nonstick coating. Steel on the ridges, coating in the valleys. The pitch is that the steel sears and the coating releases.

America's Test Kitchen tested the best-known hybrid pan in its January 2026 nonstick skillet review and listed it under “Not Recommended.” Its finding: “the nonstick coating is interrupted by uncoated hexagons of that same stainless steel, which is why food stuck to it.” Eggs stuck, and even an oiled frittata didn't come out clean. [2]

Prudent Reviews, which rates the same pan favorably overall, still draws the line the same way. Buy a stainless pan and a nonstick pan separately and “you get better durability with the stainless steel pan and better food release with the non-stick pan.” The two together, it notes, often cost less than one hybrid. [3]

That is the trade-off. Some sear and some release, neither as good as a pan built for the job.

## People are fed up with their hybrid pans

The testers' verdict is the same thing owners report after months of cooking. Bon Appétit found that unhappy owners “have filled internet forums with their complaints about the pans' longevity and quality, lamenting how eggs and other foods started sticking after just months—sometimes weeks—of regular use.” [1]

- One owner's 18-month update on YouTube is titled “[I Hate my _______ pan](https://www.youtube.com/watch?v=zzr9u8z959k).” [5]
- On [r/cookware](https://www.reddit.com/r/cookware/comments/1j1j4vo/hexclad_and_highpriced_nonstick_is_trash_fight_me/), a thread calling high-priced hybrid nonstick “trash” drew 239 upvotes and 180+ comments. [4]
- Tasting Table rounded up the [nine most frequent owner complaints](https://www.tastingtable.com/2270017/frequent-complaints-hexclad-know-before-buying/) in October 2026. Three are about the pan itself: the coating peels in normal use, the pan stops being nonstick, and it needs babying, which Tasting Table says “isn't clear from their marketing materials.” [6]

Three complaints come up again and again: food sticks even with oil, the coating fades, and the pan needs babying.

## Why every coated pan fades

This part isn't unique to hybrids. Bon Appétit spoke with Rob Macfarlane, a professor of metallurgy and materials science at MIT, about ceramic nonstick. Repeated heating and cooling cracks the brittle silica coating, friction rises, and release drops. Bon Appétit, summing up his explanation, puts a nonstick pan in regular use at one to two years. [1]

A hybrid adds steel ridges on top of that coating. The ridges guard it from a metal spatula. They don't stop the coating itself from wearing. Once it wears, food sticks more.

## The best alternative for searing: Stainless Clad

A hot stainless pan puts the whole face of a steak against steel. It browns edge to edge and leaves fond behind, ready to deglaze into a pan sauce. On a hybrid, steel covers only the raised pattern. The rest of the surface is nonstick coating.

Chefs Alejandro Najar and Alyssa Osinga chose our Stainless Clad for their crab cakes:

> “...we picked Stainless Clad Made In for the cookware, for this dish, because the sear that you get on there is, like, it's perfect...”

And they'll tell you stainless isn't as sticky as its reputation:

> “...what people don't realize is that stainless steel, if you get it hot enough and you work with it, it's non stick and it's it's amazing.”

There's no coating to wear out. Stainless Clad is 5-ply, with an 18/10 stainless cooking surface and an aluminum core, oven safe to 800°F, and it works on induction, gas, electric and glass.

**Our pick:** the [12" Stainless Clad Frying Pan](https://madeincookware.com/products/stainless-steel-frying-pan/12-inch), crafted in Italy from five layers of metal. [More than 4,000 restaurants](https://madeincookware.com/pages/made-in-restaurant-finder-lp) cook with Made In.

## The best alternative for eggs and fish: CeramiClad

CeramiClad puts a ceramic nonstick surface on a 5-ply Stainless Clad body, with no steel ridges in the way. The whole surface releases.

It's PFAS-free, verified by ISO 17025 accredited third-party testing: 30 of 30 tests.

Chef Mark Bolchoz:

> “You need one small egg pan and the Made In Ceramic is one of the best ones that is available”

Chef Ben Baker:

> “The ceramic non-stick gives us the glide without the fat.”

[Every nonstick coating wears with use](https://madeincookware.com/blogs/ceramic-vs-nonstick), ours included. That's why we don't make every pan nonstick. Use it where release matters, keep it at medium heat or below, skip metal utensils, and hand wash it.

## The best alternative for heat: Seasoned Cast Iron

Cast iron's mass is the point. It stores heat, so a cold steak doesn't knock the pan off temperature.

Chef Michael Arlt:

> “Cast Iron, for its heat retention- especially after something as hefty as a steak can drop the temperature of the pan considerably.”

Chef John Kleifgen:

> “There is no other way to get the right crust on southern cornbread.”

With regular cooking and good care, the seasoning deepens over time.

## The lighter option: Carbon Steel

Carbon steel gives you a seasoned surface like cast iron in a lighter, more responsive pan. Our 12" weighs [4.3 pounds against 8.2 for 12" cast iron](https://madeincookware.com/blogs/carbon-steel-vs-cast-iron). It's made in Sweden, ships preseasoned, and goes from induction to grill to open flame, oven safe to 1200°F.

Chef Niki Nakayama:

> “...when we are attempting to do high sears like we do on our Wagyu steak, it's critical to make sure that the pan doesn't go down in heat the moment you put the ingredients in. So the carbon [steel] really retains heat super well.”
