### **Step 1: Let the Pan Cool Slightly**

Cast iron retains heat extremely well, so give it a few minutes before cleaning. Warm is good. Screaming hot is not.

Cast iron cookware is tough. Really tough.

Even if the seasoning gets stripped, even if it develops rust, even if dinner gets burned beyond recognition, you probably haven’t ruined the pan.

Keep it dry, maintain thin layers of seasoning, and cook with it often. That’s really the whole system.

The more you use cast iron, the easier it gets.
