What Is PFOA and What Does It Have to Do with Cooking?

Perfluorooctanoic acid, or PFOA for short, is a man-made chemical. Manufacturers use PFOA to make products designed to resist heat, water, grease, and sticking.

Some non stick and resistant consumer products contain no PFOA, but the chemical is still used in the manufacturing process. While these manufacturers of non stick pots and pans typically use PFOA, the chemical is mostly burned out of the products during manufacturing. Even when removed from non stick products, however, PFOA does not just disappear.

The man-made chemical can have a strong persistence in the environment. PFOAs can contaminate the water, soil, and air during the manufacturing process. The Environmental Protection Agency (EPA) actively monitors water supplies in the United States. The agency has detected measurable amounts of PFOA in drinking water in 29 states. Due to the chemical's prevalent use, most people have some level of exposure. This includes individuals who do not live near a factory or work with the chemical. Blood tests reveal that most individuals have at least trace amounts of PFOA in their bloodstreams. 

Does Exposure to PFOA Have Any Side Effects?

Many studies have shown the harmful effects of exposure to PFOA in lab animals and large samples of people, alike. High levels of exposure are associated with:

  • kidney and testicular cancer
  • ulcerative colitis
  • thyroid disease
  • liver damage
  • cholesterol concerns
  • changes in blood pressure during pregnancy
  • health problems with fetuses, babies and children

What Does It Mean to Be PFOA-Free?

The chemical used to create non stick coatings is called polytetrafluoroethylene (PTFE). PTFE creates a smooth surface to prevent sticking. It is also highly stable, meaning it won't react with other chemicals. 

PFOA can still be used to manufacture PTFE non stick products. So, when cookware is categorized as PFOA-free (like Made In's non stick frying pan), it means that the product was manufactured without the use of PFOA
